Le Thiers by Chambriard, Norwegian Birch wood handle,
distinguished by its receding bolster, forged spring with the Thiers emblem or fly and the production year engraved on the bottom of the knife. Hand filed rose on the back of the spring.
The Thiers knife is the fruit of the collaboration between the cutlers from Thiers, the capital of French cutlery, and bears its name.
XC75 Carbon steel blade on Norwegian Birch handle. Carbon steel has fewer alloys such as chrome and vanadium and is both easier to sharpen and will hold an edge better.
Over time, a carbon-steel knife will normally acquire a dark patina, and can rust or corrode if not cared for properly by cleaning and lubricating the blade after use.
Norwegian birch grows very close to the polar circle found in Finland and Belarussia.
